Recipe for Stir Fry Minced Pork with Chives

This is a healthy yet easy recipe for homecook. Both young and old enjoy this dish whenever I cook them. Hope you will have fun trying it!!

Preparation Time: 5minutes

Cooking Time: 10minutes


Stir Fry Minced Pork with Chives

(Serves: 4 adults)


Ingredients:

400gm Minced Pork/Chicken

500gm Chives


Marinade:

1 small clove garlic (smashed and chop finely)

2tbsp light soy sauce

1tbsp Worchestire Sauce

1tbsp sugar

a pinch of salt

a dash of white pepper


Methods:

1) Add marinade into minced pork. Mix well and Set aside.

2) Meanwhile, wash and clean chives from any dirt. Drain.

3) Cut off the hard ends of chives.

4) Cut chives into half inch long.

5) Heat wok or a non stick pan.

6) Add 2 tbsp oil. Stir fry minced pork for about 4minutes under medium flame.

7) Spoon out the minced pork. Do not wash the wok.

8) Add 1 tsp oil and stir fry chives quickly. Sprinkle 3-4 drops of clean water.

9) When chives turn green, add in cooked minced pork.

10) Stir fry for another 2minute and mix well.

11) Serve hot with plain white rice or fried rice.

Memories


Recently, my mind was full of sweet old memories. I was talking to myself the reasons I am thinking all these non-stop. I tell myself that I must be missing those days when I am still young, carefree and feelings that I have nothing to lose in this world. But as we aged, we become alot wiser, making "correct" decisions and we make use of our consciousness and reasoning skills. Well, at least I hope that I am making correct decisions.

When I was young, I cant wait for myself to grow up and envy those adults who seem to have all the freedom that one can have. But now that I'm an adult, I just hope I can turn back time and become a kid all again. Life full of games, fun, parties and no major decisions need to be made. And no one will blame a kid for things that go wrong in your life.

But, in reality, life goes on. I have to (like it or not) to choose, to make decisions as "correctly" as I can, so that I won't regret it later and blame myself for those misfortunes. Well, decisions from career, choosing the "right" one, planning for a family, having a baby, all of these are such huge responsibilities.

But I guess, that is part of being "normal" in this "normal" world!I have to life live fully ~ but not always how I want it to be.. at least not in this culture!To be acceptable in this environment, in most cases, one must not put self on the top place, you have to consider your loved ones needs before you, and maybe that is why I feel tired sometimes.

Well.. memories will always be kept in our mind and heart forever. So i guess, memories help us to find back the need to keep life going, to add more beautiful memories in the future so that when we leave this world, we will be able to bring memories filled with emotions with us. As the elderly says, "When we die, we can't take along our possesions, money or status but we will bring memories with us and leave behind precious memories for our loved ones, to Miss us"~

Wet Market Tips

Mom-in-law and I went to the wet market near our house one day to shop for grocceries n fresh food. We decided that we will cook Chicken Rice for today so we went to our favorite stall that sellls "fresh chicken".

The lady was very chatty today and ask the purpose of the chicken. When we told her that we wanted to cook Chicken Rice, she recommend us to buy "hand-cleaned chicken". She then enlighten us with her knowledge of the differences between "machine-cleaned chicken" and "hand-cleaned chicken".

Apparently, "machine-cleaned chicken" has less fat as most of the fats are removed. These type of meat are suitable for stir fry, home deep-fry and of course it is healthier.

Meanwhile, "hand-cleaned chicken" uses the expertise of the person to debone or remove the excess fats. These meat are most suitable for making chicken rice (as we need the oil later for cooking the chicken rice).

She also teach us an EXTREMELY easy way to cook Steam Chicken Rice. Here's the recipe:-
**Instead of the hassle to have to turn the chicken around while cooking, try this:**

1)After cleaning the chicken, put chicken in a pot, cover it with enough water. Bring to boil (water & chicken together) under strong flame. Let it boil for 12-15minutes. DO NOT OPEN THE LID!

2) After 12-15minutes, switch off the gas and let the chicken sit inside for another 30minutes. DO NOT OPEN THE LID. Used the chicken stock to make the chicken rice.

Believe me, the chicken turns out Perfectly cook n Skin still beautiful intact while the meat is tender. TRY THIS TODAY!

Recipe for Steam Chicken Rice (serves: 6-8adults)
Ingredients:
1 whole chicken or 8 chicken thighs
water to cover chicken
2-3pc ginger
Optional:
4-6 scallops (soaked & water reserved)
**Put all ingredients to boil. Follow above instructions.

Chicken Rice Ingredients:
4 cups Fragrant Rice
Chicken stock
Salt
Msg (optional)
4 spoonful Garlic Oil (fried minced garlic with oil)

Leftover chicken stock can be used for soup or freeze it in the fridge for later use.

Garnish with Spring Onion or Chives.

Simple Ginger Dip For Steam Chicken Rice:
150g stalks of ginger (clean & roughly sliced)
5 cloves of garlic
Juice of 3 lime / quater of lemon / 1tbsp vinegar
3 tbsp chicken stock
3 tbsp sugar
1 tbsp salt
Blend all ingredients together. Add 2 hot chilies if you love it spicy.
Store remaining ginger sauce in an airtight glass container. Fridge.
Serve ginger sauce with black soy sauce.
